mêek was opened in Fukuoka in 2022 by chef Hiroshi Hashimoto. The inspiration for the restaurant began with his memories of his first visit to Thailand. After that experience, he traveled through various parts of the world, encountering different food cultures. The name “mêek,” meaning “cloud” in Thai, pays tribute to Kumo—a café that once occupied the same space and whose name also means “cloud” in Japanese. Cherished by the local community for over 50 years, the café’s legacy is honored through this name.
Thai cuisine is broadly divided into four regions, each shaped by distinct climates and cultures. Beyond the familiar dishes, there are many simple and nourishing regional specialties that evoke a sense of nostalgia, even for Japanese diners. At mêek, the focus is on these richly regional dishes, incorporating seasonal, pesticide-free vegetables from farms across Japan alongside native ingredient varieties. Spices and seasonings are used sparingly to bring out the natural character of the ingredients, resulting in gentle, wholesome dishes that the body naturally embraces.
At <mêek at 2ND FLOOR>, guests can enjoy an eight-course meal—with a drink included—that showcases flavors and techniques rooted in regions from southern to northern Thailand. We invite you to savor this unique expression of Thai culinary culture through mêek’s lens.

Hiroshi Hashimoto
At 19, Hashimoto first visited Thailand and was captivated by the warmth of the people, the aromas of the cuisine, the gentle rhythm of the language, and the relaxed atmosphere. After returning to Japan, he trained at a Thai restaurant in Fukuoka before traveling throughout Asia, the Middle East, and Europe to explore diverse food cultures. In 2022, Hashimoto opened his own Thai restaurant, mêek, in Fukuoka.
