Every Wednesday, DOWN THE STAIRS dedicates the day to “VEGAN WEDNESDAYS,” creating a welcoming space where diners can explore veganism as one of many dietary choices. While the regular menu features vegan burgers by POS kitchen somewhere, this event will offer a special menu item from the popular Parisian vegan caterer, H Vegan Bento: a “Chilled Three-Flavor Noodles & Vegan Gyoza Set.” The dish features a rich soy milk miso sesame-based sauce, paired with three flavorful pastes—shiso leaf, tomato, and seaweed—that add a delightful variety of tastes. Our regular vegan burgers from POS kitchen somewhere will also be available.

PROFILE
H Vegan Bento Director: Hiroko Shiraishi
Hiroko Shiraishi moved to France in 2004. After experiencing a serious illness, she embraced a vegan lifestyle. As she honed her vegan cooking skills, she became determined to share the deliciousness of vegan food with as many people as possible. During Paris Fashion Week in fall 2019, she developed her first vegan bento prototype, which quickly gained popularity through word of mouth. Since then, she has been offering Japanese-inspired vegan catering primarily for the fashion industry, including photoshoots and backstage at Paris runway shows.
