about Canelé
Canelé is a traditional French pastry that originated in the Bordeaux region. Known for its wine production, this area once employed a technique called clarification to remove impurities and enhance the clarity of the wine, using egg whites in the process. To make use of the leftover egg yolks, it is said that canelé was created. In monasteries at the time, where beekeeping was common for obtaining materials for candles and medicine, batter was poured into copper molds coated with beeswax and then baked.

Chestnut Flour Canelé
The canelé from MAISON with ARTS&SCIENCE is crafted using a traditional method in which copper molds are coated with beeswax before baking, resulting in a fragrant and glossy finish. The team at MAISON has meticulously refined the recipe through numerous trials, adjusting the sweetness and flour ratios to create a canelé that highlights the chestnut’s unique natural sweetness and aroma. Baked with care each morning at the Minami Aoyama store, our canelé is available in limited quantities.
In the eat-in area, our canelé is served alongside beeswax ice cream. Takeout is also available, making it an excellent gift option. While it can certainly be enjoyed the next day, owner-chef Sōta Atsumi emphasizes that to fully appreciate its flavor, it’s best to savor it on the same day. Therefore, we do not offer mail-order sales.
