Starting with the memory of his first visit to Thailand, Hashimoto travelled around the world encountering food cultures before opening m\u00eaek in Fukuoka in 2022.<\/p>\n

Following an event at 2ND FLOOR in Zaimokuza, Kamakura last summer, this edition will be held at DOWN THE STAIRS in Tokyo. This time, against the backdrop of the food culture of mountainous regions shaped under the influence of neighboring countries, we invite you to enjoy Northern Thai cuisine incorporating native Japanese vegetables and seasonal ingredients.<\/p>\n

Fermented ingredients form a complex umami base, layered with acidity and aromatic notes. Alongside spiciness, bitterness is also incorporated, resulting in aromatic dishes with a generous use of herbs, presented in a course format. Cooking and presentation make use of natural materials such as banana leaves, evoking a dining experience that engages not only taste, but also aroma and atmosphere. Ingredients are planned to feature Kyushu pork, seasonal vegetables, and noodles.

\nAt 19, Hashimoto first visited Thailand and was captivated by the warmth of the people, the aromas of the cuisine, the gentle rhythm of the language, and the relaxed atmosphere. After returning to Japan, he trained at a Thai restaurant in Fukuoka before traveling throughout Asia, the Middle East, and Europe to explore diverse food cultures.
